Mini Grilled Chicken Club

Hello Hello!!!!


It's the middle day of the week, at least that's what I call it and it's about to end! Im not going to lie...I'm extremely ready for my bed!!! It was a good day. Busy, but good.


Here is a recipe with a little bit of a special touch, miniature!


Mini Grilled Chicken Clubs


Ingredients





  • 1 small zucchini, chopped (1 cup)



  • 1 large garlic clove, chopped



  • 1/2 cupfresh basil leaves



  • 1/4 cupfinely grated Parmesan cheese



  • 1 tablespoonfresh lemon juice



  • 1 tablespoonolive oil, plus more for grill



  • 4 chicken cutlets (3/4 pound total)



  • 1/4 teaspoonsalt



  • 1/4 teaspoonpepper



  • 4 small sandwich rolls, cut into thirds crosswise



  • 1 small tomato, cut into 8 thin slices



Directions

Combine the zucchini, garlic, basil, Parmesan, lemon juice, and 1 tablespoon oil in a food processor; process until smooth. Transfer this mixture to a small bowl.

Now, Preheat a lightly oiled grill over medium-high heat. Season the chicken with salt and pepper!!! Next, grill until golden and cooked through (about 4-5 minutes). Slice in the chicken half. Toast the cut sides of rolls on grill until golden on one side, around one minute.

 Top the bottoms of rolls with half of chicken and pesto; top with middle piece of the roll. Now, layer rolls with remaining half of ingredients and tomato slices. Finally, finish with the remaining part of roll and that's it! ENJOY!

I know I sure will!!! I love me a good grilled chicken sandwich!
