Guest Post--Kandice from SCRUMPTURE!

I have missed you SO much.


I have been very busy these past few days, and I am seriously about to call it a night here in the next few minutes. 
BUT, before I do so, let me introduce you to my friend Kandice! who is a momma, blogger, crafter,....pretty much SUPER WOMAN to me!
Stop by Scrumpture and read her fun filled posts.
She is such an awesome lady, and I had the joy of spending a few hours with her on Friday morning. 
We had a nice little coffee date. 
We have had it planned for her to guest post for a while now, and tonight we are actually gong to introduce HER as the first guest blogger EVER, right here on Itsy bitsy!

Hello everyone! :)
 its so lovely to be guest posting over here at itsy bitsy Brianna! :) i'm absolutely thrilled and so honored to be the first! 

a little bit about me: i have 2 lovely daughters, a sweet husband, i live in a small town in Tennessee, and i am obsessed with baking! :) 

that being said : let's get down to business! 
today i made red velvet cupcakes with cream cheese frosting.. with just a hint** of strawberry! :) so fun! and SO delicious!! my adorable little baking buddy thought these were the most fun cupcakes we have ever made!



pre-heat your oven to 350 & 2 muffin tins:)

here is what you will need: 



2   large eggs, room temperature 

1 cup buttermilk, room temperature
1 1/2 cups vegetable oil
1 teaspoon cocoa powder 
1 teaspoon salt 
1 teaspoon baking soda 
1 1/2 cup sugar 
2 1/2 cup all-purpose flour 
2 tablespoon red food coloring 
1 teaspoon white distilled vinegar 

~ i don't use buttermilk. i find it completely pointless to purchase buttermilk when i can add 1 tsp lemon juice per 1 cup regular milk and make my own. :)

~ i didn't use white distilled vinegar, i used lemon juice again. :)




sift together the flour, sugar, cocoa powder, salt & baking soda. in a separate bowl, use a mixer and mix the wet ingredients, including the food coloring. i didn't have 2 tbsp of red food coloring.. so i improvised with one and then an entire little container of hot pink food coloring. it was really fun. haha :)



after the wet ingredients are mixed, slowly add the dry ingredients to the wet- until completely incorporated. 




bake for 20-22 minutes, until a butterknife comes out clean.



and now- for the MOST delicious part- :)
THE FROSTING!!

you will need:

2 sticks of butter, softened
8oz plain cream cheese, softened
8 oz strawberry cream cheese, softened
4c sifted confectioners sugar
1 tsp vanilla extract.




mix butter, cream cheeses and vanilla with mixer on low setting until completely combined. then beat on high until light and fluffy! :) add the sugar 1 cup at a time and mix completely per each cup, until all sugar is gone. lick beaters!


if you want to use a frosting bag, i recommend the biggest star tip you can find! :) 

ok.. last step! and the most FUN step! 
get CREATIVE! 

you will need 

red candy melts (OR white almond bark and ONE drop of regular red food coloring (oil based messes up the chocolate, which is what i always seem to end up with... and i forget... until after i've ruined the bowl of chocolate! so unless you have almond-bark compatible food coloring... ONE drop will do it!))
a squeezy bottle (i'm using a tiny pencil shaped bottle that my grandma gave me as a gift (set of 3) but i also have larger squirt bottles from wilton. DO NOT microwave the bottles. they will melt and get holes in them. i learned that the hard way, ha)
wax paper


lay the wax paper down on a flat surface. spoon the chocolate into the squirt bottle. write, draw, scribble little pieces and words and shapes- as big or small as you want!


let the shapes/words dry while you frost your cupcakes. peel them off VERY gently! then stick them on top of the cupcakes!

voila! beautiful cupcakes!
