My favorite Berry.


That would be BLUEBERRIES.
and lucky for me, my Mr.'s Grandmother 
graciously gave me a GALLON of them.
AHH! they are SO delicious.

Although I could just sit down with the bag of blueberries, and eat the entire bag in one sitting, I'm thinking it would be more interesting to bake with them.
Actually, this is my Pawpaw's idea.

So, I'm thinking I should grant him his wish for Homemade Blueberry Muffins.
Except, you and I have a little secret that we will definitely keep from him....
These special muffins are actually pretty healthy.
 So, lets keep that on the hush hush from him.
Otherwise he might not enjoy them as much.

So here you go.
FRESH BAHLEW-Berry MUFFINS


Ingredients:

1 Cup regular Oats
2 Cups Low-Fat Buttermilk
1 2/3 Cups Whole Wheat Flour
3/4 Cup Dark Brown Sugar
2 Tablespoons Veggie Oil
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Salt
2 Large Eggs [Lightly Beaten]
1 Cup Blueberries

Directions:

Combine Oats and Buttermilk in a medium size bowl, 
cover, and refrigerate overnight.
The next day, Preheat oven to 350 degrees.
In a large bowl, Combine Oat and Milk mixture with 
Flour,
Brown Sugar, 
Vegetable Oil, 
Baking Powder, 
Baking Soda, 
Salt, 
and Eggs
Beat well with a mixture until all is combined.
Fold in the Blueberries.

Coat your 24 muffin baking Tin with Cooking spray
Then fill with each tin with the batter.
Bake for about 15 minutes!

Hey B! Thanks for the prayers! I think I will completely fall apart if he has to go away..so I'm praying this other job comes through. But it better soon because this other one is getting close..too close..and the jewelry party went good! You have got to come when I do Krissy's Party. It's on a Friday August 20th :) How did your interview go?

my MIL loves blueberry pie.. i'm not one for pie, but i imagine a blueberry one might taste good. blueberry muffins are my FAVORITE! :)

Oh yum! I love love love blueberries. They are my absolute favorite. Last night I had chocolate covered blueberries. They are so good. I'm going to try out your recipe over the weekend. Wish me luck
