Spicy Tortilla Soup

Cold Front?

Yeah I do believe that is what took over today.

Thank God for my "at-desk space heater" at work.

This cold weather, however is absolutely PERFECT for soup, which is probably one of my FAVORITE things about both fall and winter season.

So Here's To CREATIVE SHARE WEDNESDAY

SPICY TORTILLA SOUP

Ingredients

two seeded ancho chiles

one onion two tomatoes

two garlic cloves

six cups chicken broth

four corn tortillas (torn into strips)

shredded cooked chicken

1/2 cup cilantro

garnish: crisp tortilla strips mexican cheese cilantro lime juice

DIRECTIONS

Puree the chiles with chopped onion, tomatoes and garlic. Sautee puree over medium heat in a large soup pot. Add in the chicken stock, as well as the tortillas, shredded chicken & cilantro. Let the soup simmer until it becomes thick. salt to your preference and top with whatever garnish you please!
