I REALLY have come to LOVE Wednesday's Blogging
My life is constantly consumed with Creative thoughts
and even more than that Creative Problem Solving.
which can be a real Challenge, usually!
but HEY! I love a little challenge. Life would be rather boring without them.
I absolutely LOVE baking.
and Here are a number of reasons that I love it
ONE: It's Hands-on. and if you know even a little bit about me, I absolutely adore anything that I can CREATE with my own two ity bity hands
It amazes me what God can do th
rough them.
TWO: The possibilities are absolutely endless, and there is so much that can be created.
The flavor combinations are absolutely ifinite
and its all CREATED from absolutely NOTHING!
THREE: I know how much my PawPaw loves his sweets, and I personally thinks he loves MY sweets more than any other! and I love making things for my pawpaw & nanny because I feel like I owe them so SO much, and this is a really small tiny way to give them something that is useful to them....well sora useful:)
FOUR: My grandmommy is an AMAZING cook, and I think I got a little bit of my love for it from her. She can make a KILLER coconut cake.

At Christmas time, She always makes a Coconut cake for one of the parties. Well, SADLY this year she was sick and at the party, I didn't know she hadn't made the coconut cake that was there. Well I went and cut a rather large peice out of the cake, and when I put that cake in my mouth I KNEW KNEW KNEW it was NOT my Grandmommy's.
It could have NEVER even compared to her moist and delicious Coconut Cake!
FIVE: I absolutely LOVE how you can make them so pretty and cute. Because also as my grandmommy [and foodnetwork] has always said the PRESENTATION absolutely matters.
Okay, so now that I've gone slightly off the path of CREATIVE SHARE WEDNESDAY,
lets get to that!
I baked PEACH UPSIDE DOWN CAKE this weekend
[for my PAWPAW on Mother's Day haha]
PEACH UPSIDE-DOWN CAKE
INGREDIENTS:
1 Tablespoon Butter [melted]
3/4 Cups Light Brown Sugar
2 Medium size ripe Firm peaches [Chopped]
1 stick of butter [room temp]
3 eggs
1 Cup Cake Flour
1 Teaspoon Baking Powder
1/4 Teaspoon Salt
1 Cup Sugar
1/2 Cup Buttermilk
1/2 Teaspoon Vanilla Extract
DIRECTIONS:
Preheat your oven to 350 degrees.
Coat a round baking pan with cooking spray, [I actually use a Cast Iron Skillet, it works wonders]
Pour melted butter into the bottom of the pan.
Evenly sprinkle the brown sugar into the melted butter, then evenly put the peaches over the brown sugar and butter. Now set the pan/skillet aside for a little while, while you make the cake batter!
For the batter cream together the stick of butter with the sugar, and mix until fluffy. now add the eggs, one at a time until they are all well incorporated! Now add the vanilla extract.
in a seperate bowl, sift together the cake flour, baking powder, and salt!
Now, add 1/3 of the dry ingredients into the "wet ingredient" mixture and mix until combined, now add half of the buttermilk, then repeat alternating between the two and ending with the dry ingredients.
Make sure all is mixed well, then pour into skillet/ pan over the peaches!
Bake for about 45 minutes or until a toothpick inserted in the center comes out clean!
It was REALLY REALLY fun to make.
