A.M. Luck

God answered my prayer from my Nearly A Disaster post
He let my cake be pretty when I woke up,


No, it didn't just miraculously get pretty overnight.
The first thing I did when my feet hit the floor was get back to work on that little stinker!
So, I coated the three TWO layered square cake with the baby pink Icing
and made a little straberry flower in the center
and now its oh so lovely.

I think I forgot to mention that the cake was made from scratch.
I used the same recipe for a cake last weekend for another family, and they all just raved at how yummy it was. So, when my grandmommy asked for a strawberry cake, I knew EXACTLY what recipe I was going to use.

I LOVE baking from scratch.
as you know, I live for creating things from nothing.
So, when it comes between baking a cake from scratch or baking a cake from a box, I ALWAYS go for the scratch.
There is just something beautiful about making things completely on your own.

Yesterday, I got a message from a lady asking if I would bake her husbands birthday cake.
 [She wanted this exact strawberry cake for it too]
Sadly, I will be out of town the weekend she was needing it.
So, she asked for the recipe, and I figured I would just post it on here, along with another semi-homemade recipe so I could pass along the recipe to everyone!

FRESH STRAWBERRY CAKE
with Strawberry Cream Cheese Frosting


INGREDIENTS:

1 cup Butter [softened]
1 3/4 cups Sugar
3 large Eggs
2 cups Pureed fresh or frozen Strawberries
3/4 cup Sour Cream
2 teaspoons Strawberry Extract
3 cups All Purpose Flour
1 tablespoon Baking Powder
1 teaspoon Baking Soda
1/4 teaspoon Salt

1/2 cup Butter [softened]
1 [8 ounce] package Cream Cheese [softened]
1/4 cup Pureed fresh or frozen Strawberries
1/2 teaspoon Strawberry Extract
6 cups Confectioners' Sugar

DIRECTIONS:
Preheat oven to 350 degrees, and grease 3 round or square cake pans
In a LARGE bowl [I put a Huge emphasis on LARGE!!], beat butter and sugar at medium speed with a mixer until fluffy. Add eggs, one at a time, beating until smooth. Now add in the Strawberries, Sour cream, and strawberry extract.
In a medium bowl, combine flour, baking powder, baking soda, and salt. Gradually add the cry ingredients to the wet ingredients [the butter mixture] and beat until combined.
Pour the batter evenly until the 3 cake pans and bake for about 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.

I like to make the frosting while the cakes are BAKING, because I like to put the frosting in the refrigerator so it can harden a little while the cakes are cooling.
So while the cakes are in the oven baking, make the frosting.
In a large bowl, beat butter and cream cheese at medium speed with a mixer, until creamy.  Next, add in the Strawberries and Strawberry extract, beating until it is all nicely combined.  Gradually add in the confectioners' sugar, and beat until the sugar is completely combined, and you have a really pretty baby pink frosting!
Cover the bowl, and place in the refrigerator until the cakes are completely cooled.
After the cakes cook completely, Ice the cake putting icing between each layer.
Then all over the remainder of the cake.


I am all about making things pretty, So I put Fresh straberries on the top of my cake!

I'm not sure I'm brave enough to try this on my own but it looks delicious!! Strawberry cakes are one of my favorites!!!

oh i love LOVE baking!!! it is one of my favorite things ever!!! and yes always from scratch! i make the best lemon meringue ever and folks are always amazed that it is homemade...but why not it is too easy!!

unfortunately my youngest daughter is very allergic to strawberries so we don't really keep em around or use them too often...but i bet this cake is just amazing!!!
