Sweet Chicken Salad & New Hair

Does anyone LOVE chicken Salad?
Well for about my entire life, I wouldn't even fathom the idea of trying chicken Salad, 
or Potato Salad, Tuna Salad, Egg salad.
Anything that was mushed up and made to stick together by a wad of mayonnaise.
haha:) I HATE Mayo!

First I have to tell you a little bit about another one of my weird hang ups, 
I guess you could say.
I went about eighteen years before I tried my first green bean.
I mean ITS GREEN, Stringy, and slimy...
So one day, I don't know exactly what it was, I just worked up enough courage to actually try one.
OH MY HEAVENS
Did I ever fall in LOVE.
You can ask my mommy-o about my LOVE for them!
 I've probably eaten enough green beans to make up for all the years I went without them.

Well Chicken Salad was a lot like my green bean story.
I THOUGHT I just couldn't handle the texture of it, and that mushy mess I still don't particularly prefer!
BUT,  through my nanny, and a little bit of tweaking of my own I figured out a little bit of a recipe that I really LOVE!


1 Large can Chunk Chicken Breast 
1/2 Small can Pineapple Tidbits [or crushed pineapple]
1/2 cup of Grapes [halved]
1 Cup Greek Yogurt
1/2 cup chopped pecans
1 tablespoon Honey
Black Pepper [optional]

I promise this is SOOOO delicious!
I will be making me up a batch tonight.

& Here Here Here is my new hair color.
I'm SUPER happy.
I needed something new.
I was in a SERIOUS SERIOUS rut.
and that my dear friend is NO GOOD!




This very tiny splash of color gave me that little shove I needed to work my way out of the rut
now, I am SUPER excited about the next hair appointment.
Something bolder bolder bolder!

One small last little tid-bit I forgot to mention
My Mr. started going to the University with me.
and it's even better than imagined.


I LOVED being able to see him.
We even grabbed a quick subway lunch!


 His cousin Ricky came on his lunch break too!
It was a FANTASTIC day.
I'm off for a good nights rest!

Ohmigoodness girl! I love green beans!

When you cook them, you should put some slices of bacon and onion in there, while they are cooking on the stove. Gives them more flavor :)

I am with you - I detest mayo! YUCK! I *might* give your chicken salad a try - it is tempting! I've never had chicken salad before...crazy!

Your hair looks super cute and how fun that you're at school together! You are going to love that. My hubby is 8 years older so he was already finished with college by the time I started but he got to watch me go, HA!
